Almond & Avocado Dairy-Free Ice Creams…

Almond ice cream

Ingredients

  • 500 ml of almond milk
  • 500 ml of hazelnut milk
  • 4 tablespoons of honey
  • 4 tablespoons of brown sugar
  • 500 g of soya yoghurt

Avocado

Preparation:

Put the sugar, honey, hazelnut milk, almond in a small pan. Cook on a low heat until the sugar has dissolved. However do not allow the mixture to boil.

Remove the mixture from the heat and leave it to cool. After that add the soya yoghurt and whisk together.

Put the mixture in an ice-cream maker and whisk, until it becomes thick and frozen.

Finally, freeze for about 2 hours. It is excellent, combined with crushed and toasted hazelnuts and almonds placed over the ice cream.

Avocado ice cream

 

Ingredients

  • 2 vanilla pods
  • 500 ml of hazelnut milk
  • 200 g of brown sugar
  • 4 ripe avocados
  • 1 lemon
  • 1 lime

Preparation:

Take the vanilla pods and divide lengthways into two parts, scrape out the seeds. Add them into a pan with the pods. Also add the sugar, and the zest and juice from the lemon and lime.

Cook the mixture on a low heat, until it boils and all the sugar dissolves.

Remove from the heat, pour it into a medium sized bowl and leave to cool down.

When the mixture is cooled, take off the vanilla pods.

Next, clean the avocado, peel, destone and scoop the avocado flesh. Mix it with the syrup and milk into a blender until you get smooth and light consistency .

Put your mixture into an ice-cream maker and whisk till becomes smooth and frozen. Place it into a freezer and leave it there for about two. After that you can eat it and feel free to add nuts, or chocolate.
