Magical, Nutritious and Healthy: Prunes Protect us from Many Diseases! (Recipes)
Although many of them do not really like prunes and eat only when they have to (usually when they suffer from constipation), they actually have a lot more benefits to our health than we think.
In addition to help facilitate digestion, they are an ideal dessert with only 30 calories, and it’s ingenious solution if you like sweet, but still want to eat healthy. Here are some of their significant advantages, for which they should not be avoided.
Prunes are rich source of fiber, vitamin B, C, E and K, beta-carotene, which protects cells from free radicals.
Although they help with constipation, also protect the body from cardiovascular disease, reduce the risk of diabetes, reduce cholesterol, fight cancer, help with weight loss, good for bone health and slow down aging.
Well, except prunes, this also refers to fresh plums, but it will be a little easier consuming them, because they are much more preferred. They are especially recommended for pregnant women.
Exotic Salad with Prunes
- 2 cups of bulgur
- 1 cup of prunes (quartered)
- 1 cup of orange sections (about 4 oranges)
- 1/3 cup of green onion (chopped)
- 1 cup of pistachio nuts
- 1 ½ cups of water (boiling)
- 1 cup of lemon juice
- ¼ cup of orange juice
- 2 tablespoons of honey
- 1 tablespoon of Dijon mustard
- 1 teaspoon of grated orange zest
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon cinnamon
- ½ cup of olive oil
- 1/3 cup of mint (chopped)
- 1/3 cup of parsley (chopped)
- 1/3 cup of cilantro (chopped)
Take a large bowl and mix 1 cup of lemon juice, bulgur and water. Let bulgur stay covered for 20 to 25 minutes (until water is absorbed).
Use blender (or food processor) and put honey, orange juice, orange zest, cumin, mustard, salt, pepper and cinnamon. Blend on a slow speed. Prepare the dressing by mixing well prunes, bulgur, orange sections, parsley, mint, green onions, and cilantro. Cover it and put in a fridge. Prior to serving, put pistachios on top of the salad.
